Soy Chicken and Mixed Veg






Here is another quick and simple recipe for your office lunch. Had some drumsticks but did not know what to cook, rice was cooked but i wasn't hungry, so i thought why not make soy chicken for Lunch instead.

Recipe is really simple :

1. Chicken
2. 5 spice powder
3. Chicken Stock
4. Sugar
5. light Soy Sauce
6. Dark Soy
7. Star Anise
8. Chinese Shaoxing wine
9. Ginger *
10 .Spring Onion *

Right here we go, boil some chicken stock  with  500ml of water, 1/2 cup of light soy and 1/2 cup dark soy, add 2 table spoon of sugar. The taste of the sauce should be salty with a slight sweet after taste. Then i add in the star anise and 5 spice powder, to me its important to taste as you can vary the marinade sauce to your liking. Shaoxing, ginger and spring onion need to be added. I like the sauce to able to taste the spice. Once the sauce is boiled put the chicken drumstick in it make sure the water covers the chicken. Pour in some chicken stock if its too little. ( Taste the sauce vary to your liking )

Bring the sauce and the chicken to a boil for 2 minutes and then cover it with a lid. Leave it to cook in the latent heat. Best to leave it overnight as the chicken will soak in the sauce.

Next morning chop the chicken and there you go soy chicken. You can also add some of the sauce to the rice. As for the fried Veg, simply fry some leftover veg with garlic and Oyster sauce. ( Will elaborate more on this later)

Home Made Pizza





 It was one of those nights, it was pretty late after work and you want to eat something nice and hot. Pizza came to mind, so i thought, "Why Not, Its not going to be too difficult." So i rushed to Woolworth to grab some ingredient.

Here is a quick pizza recipe.

Pizza Base - i got wood fired pizza base but Mc Cains will do as well
Pizza Sauce - 4 Chesse sauce ( I bottle)
Cheese - Get the whole mozzarella

Meat - Anything goes Prawns, chicken pieces, Salami
Veg - Rockets, mushroo, pineapple pieces

How to cook

1.  For the sauce : Pour the sauce into a pot, add in 1/4 cup of red wine, put in some dried mixed herbs. Reduce the sauce down to almost a paste on low heat

2.  Preheat the oven to 220 degree, slice the mozzarella, cut the meat into bite-size pieces

3. Meat - pan fry the ingredient with Moroccan seasoning ( You can get this at any super market)

4. Spread the sauce over the pizza base, followed by the Mozzarella, then the meat of your choice and either mushroom or pineapple 

5. Once the cheese is melted , i add on the rockets, sprinkle with some olive oil. I let bake for another 5 minutes before taking it out

You pretty much can make up your own combo...

My favcombo

1. Grilled Moroccan prawn, pineapples, rockets and a dash of Jap Mayo

2. Grilled Moroccan Chicken, pineapple, BBQ sauce and rockets.


All these done in less than 30 minutes. Stared at 7.00pm and eating by 7.30

Grilled Restaurant

Went to the Grilled Restaurant to sample their delectable Burger. I ordered the Back Bar, a flame grilled scotch fillet steak tuck in between rockets, onions, tomatoes and a mayo sauce. The charred bread was nice and crusty, while the order of fries seasoned with herbs was a nice variation to the usual fries.

This is one of the better burger joint i have visited. Furthermore i must say when you visit the Claremont Quarters, you feel like you are in another country. Its just not your typically australian mall. It has somewhat of a semi quasi french feel to it, with one of a kind shops scattered around the mall. It would i might add make for a nice weekend getaway.

Anyway, i got this burger free as i helped my housemate with his tax return.

So if you happen to be free, get down to Grilled especially in Claremont Quarters, you will not live to regret this trip

Beef and Guinness Pot Pie



Recently while exploring the Coventry Market in Morley Perth, I came across a shop that sells takeaway Beef and Guinness Pie, so out of sheer curiosity i decided to sample it. I liked it so much i decided to try making it myself.

I sample a number of recipe and found this to be the best.
  • 500g of scotch fillet beef, cut into 1-inch pieces ( If you cook for yourself get the best beef)
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 large onion, coarsely chopped
  • 2 garlic cloves, chopped
  • 3 tablespoons tomato paste
  • 1 cup beef broth
  • 1 cup Guinness or other Irish stout
  • 2 tablespoon Worcestershire sauce
  • 2 teaspoons drained brined green peppercorns, coarsely chopped
  • 2 fresh thyme sprigs
  • Rough puff pastry dough
  • 1 large egg, lightly beaten
  • Vegetable options  : Mushroom , Peas and corns
  • Optional extra : Truffle oil
So here goes : use a small pot, heat it up with a little oil, throw in the onion and beef and sear it adding the salt and pepper along the way. Follow this with garlic and the optional Veg.  Once its seared pour in the Beef broth and Guinness.  Once its boiling put in the Worcestershire sauce and tomato paste. I put in the fresh thyme last. Let it simmer for about 5 minutes. Mix the Flour with some beef broth and pour it in slowly. The key is to make sure the sauce should have the texture of beef gravy.

I found on 2 tries, the key is to make sure you taste the sauce. On the second try i used a little more Guinness and Tomatoe paste ( prob 1 tablespoon more). For me I like the sauce to have the slight bitter taste from the Guinness.

Once the sauce is cooked, pour it into the pie pot, cut the puff pastry and put it over the pot. Brush it with the beaten egg. And put it into the over at 220 degrees for about 15 minutes or until crust is golden brown...

I served mine with Mixed salad with Miso Salad dressing i made..but you can do it with fries too.
