Soy Chicken and Mixed Veg






Here is another quick and simple recipe for your office lunch. Had some drumsticks but did not know what to cook, rice was cooked but i wasn't hungry, so i thought why not make soy chicken for Lunch instead.

Recipe is really simple :

1. Chicken
2. 5 spice powder
3. Chicken Stock
4. Sugar
5. light Soy Sauce
6. Dark Soy
7. Star Anise
8. Chinese Shaoxing wine
9. Ginger *
10 .Spring Onion *

Right here we go, boil some chicken stock  with  500ml of water, 1/2 cup of light soy and 1/2 cup dark soy, add 2 table spoon of sugar. The taste of the sauce should be salty with a slight sweet after taste. Then i add in the star anise and 5 spice powder, to me its important to taste as you can vary the marinade sauce to your liking. Shaoxing, ginger and spring onion need to be added. I like the sauce to able to taste the spice. Once the sauce is boiled put the chicken drumstick in it make sure the water covers the chicken. Pour in some chicken stock if its too little. ( Taste the sauce vary to your liking )

Bring the sauce and the chicken to a boil for 2 minutes and then cover it with a lid. Leave it to cook in the latent heat. Best to leave it overnight as the chicken will soak in the sauce.

Next morning chop the chicken and there you go soy chicken. You can also add some of the sauce to the rice. As for the fried Veg, simply fry some leftover veg with garlic and Oyster sauce. ( Will elaborate more on this later)
